Hi friends! This hummus is a quick, simple and delicious dish to add to your repertoire. As you’ll come to find out, I am a huge fan of hummus. I generally like to keep some in the fridge at all times for a healthy and delicious snack as well as a quick protein to add to meals.
Here is a simple and super tasty hummus recipe that is one of my favorite ways to add alkalinity (from the greens) and allows you to eat a bit more without adding extra fat and calories to your meals.
This is a great recipe to take to a gathering for a dip or sandwich spread. I will use this in place of meat in a sandwich, wrap and makes a great topper for salads. I love Garbanzos because they are such a great source of protein and super delicious.
1 can (rinsed) or 2 C cooked Garbanzo Beans
1-2 Lemons-juiced (regarding on how lemony you like yours)
1/3 C Tahini
1/3 C Olive Oil
2 C Arugula
2 C Spinach
2 cloves Garlic-chopped
1 tsp Cumin
1 tsp. Salt
Be sure when you wash your greens to either shake them dry or use a salad spinner so the hummus doesn’t turn out too moist.
Add greens, olive oil and tahini to food processor and pulse until blended. Add remaining ingredients and process until smooth, scraping down the sides a few times to incorporate all ingredients.
If using as a dip for a gathering, a sprinkle of Paprika, Sumac or Smoked Paprika is a beautiful garnish and adds some depth to the flavor. I save a few Garbanzo Beans for a topper and a little drizzle of Olive oil is lovely. Eat in-joy always be grateful and remember, savor those flavors! Ciao for now.
